Vermont Maple Cookies-Abby and Matt's favorite cookies!
Vermont Maple Cookies
1/2 cup shortening
1 1/2 cups packed brown sugar
2 eggs
1 cup sour cream
1 tsp maple flavoring
2 3/4 cups flour
1/2 tsp soda
1 tsp salt
Mix shortening, sugar and eggs thoroughly. Stir in sour cream and vanilla. Stir together flour, soda and salt and blend in. Chill dough. (best if chilled overnight)
Heat oven to 375 degrees. Drop by rounded tablespoons of dough about 2 " apart on greased baking sheet. Bake 8-10 minutes, or until almost no imprint remains when touched lightly. ( I like mine a little undercooked) Frost with buttercream frosting made with maple flavoring
Buttercream Frosting (standard cake frosting recipe)
1/2 cup margarine(1 cube)
1/2 cup shortening
4 cups of powdered sugar(I am too lazy to sift it!)
1 1/2 tsp maple flavoring (regular frosting uses vanilla)
several tablespoons of hot water
Cream the margarine and shortening together, add maple flavoring, add in powdered sugar slowly while adding several tablespoon of hot water to thin the frosting.
Spread frosting on cookies and enjoy.
WARNING: these cookies without the frosting are fairly tasteless and ugly LOL, but with the frosting they are SUPER!
TIP: I do use a #60 scoop to put the cookies on my cookie silpat sheet.
