Chocolate Crinkles


Chocolate Crinkles

1/2 cup vegetable oil
4 squares unsweetened chocolate(4 oz) melted(I melt in the microwave about 45 seconds at a time and then let rest for a minute or so and then again until totally melted-be careful not to scorch)
2 cups sugar
4 eggs
2 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup confectioners sugar(powdered sugar)

Mix oil, chocolate, and granulated sugar. Blend in one egg at a time until well mixed. Add vanilla. Stir flour, baking powder and salt into oil mixture. Chill several hours or overnight. ( chill overnight, dough is much easier to handle)

Heat oven to 350 °. Drop teaspoonfuls of dough into powder sugar. (I roll mine into balls before dropping into the powdered sugar)Roll in powdered sugar; shape into balls. Place 2" apart on greased baking sheet. (I use silpat baking sheets with no grease) Bake 10-12 minutes, or until no imprint remains when touched lightly in center. Makes 72 cookies. Tip: I use a #60 scoop on these and cook about 10 minutes. I like mine a little chewy so I don't overcook. The dough for this needs to be chilled overnight...it is pretty gooey until set up. Very pretty with the cracked look and a nice chocolate flavor!
