We have always cooked our potatoes with the skins on then they peel easy. Will have to try the ice water thing though. Never used dill pickles, but add chopped celery, green pepper and a little onion. These days I microwave scrubbed red skin potatoes until done, cool completely, then refrigerate over night. Next morning I dice them (unpeeled) and continue making the salad, adding mayo, dill pickle juice, celery, egg, and a little bit of crumbled crisp bacon. I rarely have leftovers either! I'm going to try your method and recipe one day soon.
